Low Carb Breaded Tilapia Fried Rice

Ingredients:

1 Frozen Tilapia**
2 Tbsp Almond Flour

3 Tbsp Olive Oil 
1.5 Cups "Riced" Cauliflower (frozen does work too, just a little differently)
2 Tbsp Soy Sauce
A couple green onions
Salt and Pepper to taste

**I Also use this recipe with cooked and diced chicken thighs or other types of fish as well**

Step 1:

Toss your tilapia into a pan and add 1 Tbsp of olive oil. 

Add a lid and allow to cook 3-5 minutes on medium-high heat.

Step 2:

Flip, Add lid back on and continue to cook.  Really, we just need it to thaw all the way through, it can cook further after we break it up.

Step 3:

Using your spatula, break the tilapia up into smaller chunks that will mix into our "rice" later. 

Step 4:

Add 2 Tbsp of almond flour / 1 Tbsp of olive oil.
Mix together.

Step 5:

Saute on medium-high heat until golden brown with a slight crisp. Then set aside to prepare the cauliflower rice. 

Step 6:

Rice your cauliflower.  You don't want to over rice it here. Going too small will leave you with more of a mushy pile than a rice.  Go for a more coarse grind. 

Step 7:


Add a Tbsp of olive oil and your cauliflower to an empty pan, on high heat with consistent stirring or flipping, heat until cauliflower begins to soften.  3-5 minutes.  

Step 8:

Add your 2 Tbsp of soy sauce to the cauliflower and stir till liquid beings to simmer off. 

Step 9:

Mix your Tilapia and some diced green onions into your cauliflower, heat briefly. 

Step 10:

Enjoy!
