1.5 Pounds of Chicken Thighs (More than 1 meals worth)
1 cup water
Medium sized head of Cauliflower (More than 1 meals worth).
Lettuce of choice. (I went with Romaine here.)

Half an Avocado
Shredded BBQ chicken, buttery riced cauliflower and a simple side salad. Not the most difficult meal by any meals, but hits all the summer comfort food flavors. When it’s prepped ahead of time, it’s insanely easy to toss together at the end of a long day. The best diets are usually the ones that are easiest to stick to. Do future you a favor and prep ahead of time.
Toss your chicken and water into an Instant pot on high for 12 minutes.
Use the manual release to allow steam to vent all the way before removing the lid.
Remove and place in a bowl to shred.
Rinsed, sliced and processed in a food processor till riced.
(can store in the fridge for 4-5 days)
½ Cup shredded chicken
2 Tbsp sugar free BBQ sauce.
-Sauteed in a frying pan with a small amount of olive oil to heat and add a light crisp.
1 Cup riced cauliflower
3 Tbsp butter
Salt and pepper to taste
-Sauteed in a frying pan on high heat for a few minutes until a nice soft and rice like texture.
Handful sliced green leaf lettuce
½ Diced avocado
2 Tbsp Marie’s creamy ranch dressing
Generous "pinch" of Parmesan cheese
